At Gibraltar Rock Cattle Company we sell our beef by the hanging weight, which is the weight of a side of beef with the viscera removed.
One of our 1/2 steers weighs approximately 500 – 600 lbs. The yield after butchering the side is usually around 60-70% of the hanging weight, depending on the cuts you select. You can expect to receive about 325lbs to 400lbs of meat for your freezer for one half side of beef. The weight reduction is the result of lost moisture during the aging process, bone removal and the cuts you requested. * Deposit required to confirm your order.
You will work with the butcher directly to select the cuts of meat you would like. We use LODI SAUSAGE COMPANY & MEAT MARKET for our Processing as our USDA butcher. They will call you to discuss how you want your side of beef butchered. They are very helpful and will guide you through the butchering process.
